Salad of smoked duck breast, apples, and truffle vinegar

Ingredients for 2 persons:

  • 200 g salad (mix of lettuce, rocket, chard, and spinach shoots)
  • 180 g smoked duck breast
  • 1/2 pear / 1/2 green apple / 1/2 red apple
  • 100 g small mushrooms
  • 60 g crushed hazelnuts a few shavings of parmesan
  • Pomegranate seeds
  • Salt, pepper / Truffle Vinegar / Olive Oil

Preparation:
1. Cut the green and red apple halves and the pear half into thin sticks.

2. Cut the mushrooms into thin strips.

3. Crush the hazelnuts and roast them in a frying pan without fat.

4. Roll the slices of duck breast on themselves.

5. Rinse the salad mixture. Assemble all ingredients and arrange on 4 plates.

6. Season with salt, pepper, truffle vinegar and olive oil.
