Traditional Salade Niçoise – "Niçoise Salad"

Ingredient List:
● ⅓ cup (90 ml) extra virgin olive oil, more if needed French baguette
● 1 cucumber, peeled, cut lengthwise, deseeded, and sliced with salt and pepper
● 1 handful of fresh basil leaves
● 1 handful of small black olives
● 1-2 garlic cloves, cut in half lengthwise
● 2 green bell peppers, trimmed, seeded, and sliced thinly
● 2 hard-cooked eggs, shelled and quartered lengthwise
● 2-3 French red shallots, thinly sliced
● 3 tomatoes, cored and cut into wedges
● 4 small purple artichokes, cooked and quartered
● 8 anchovies fillet, rinsed

Preparation:
1. Generously rub the salad bowl with the cut side of garlic cloves.
2. Add the cucumber, tomato wedges, green peppers, shallots, eggs, artichokes, anchovy fillets, and olives to the bowl. Salt and freshly ground black pepper may be added to your liking. The basil should be strewn over the salad.
3. A tiny trickle of olive oil should be drizzled over the salad, and it should only be lightly mixed in. French baguette is a good accompaniment.
